Dark Cherry Crisp Recipe with Fresh Summer Cherries | What's Cooking

Crisps and cobblers are a simple dessert to throw together, but they still taste like you did a lot of work. We've shared our Maple Apple Cobble, but this recipe for an easy cherry crisp takes advantage of the bounty of summer cherries that are coming into season. In our from-scratch version, sweet cherries get quickly simmered to preserve their texture along with ginger, lemon and apple juice to brighten and highlight the cherry flavor. Topped by a generous layer of old-fashioned rolled oats, butter and pie spices, our crumbly topping provides the perfect textural foil once crisped in the oven to those softened but still plump cherries.

Dark Cherry Crisp
From our Nordstrom Family Table Cookbook
(Makes 8 servings)

Streusel Topping
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
Pinch of freshly ground nutmeg
8 tablespoons (1 stick) cold unsalted butter, cut into 1/2-inch cubes
1 cup old-fashioned rolled oats

Preheat the oven to 350°F. Line a rimmed baking sheet with aluminum foil. Lightly butter an 11-by-7-inch baking dish.

To make the topping, stir the flour, brown sugar, the 1/3 cup granulated sugar and nutmeg together in a bowl. Add the butter and oats. Using your fingers, work in the butter until all the ingredients are well blended but not overmixed. Refrigerate until ready to use.

Cherry Filling
2 pounds fresh or frozen pitted dark sweet cherries
3/4 cup granulated sugar
1/2 cup apple juice
1 tablespoon fresh lemon juice
1/2 teaspoon ground ginger
3 tablespoons cornstarch

To make the cherry filling, bring the cherries, the 3/4 cup granulated sugar, the apple juice, lemon juice and ginger to a simmer in a saucepan over medium heat, stirring occasionally. Simmer for 3 minutes. Meanwhile, pour 1/4 cup cold water into a small bowl, sprinkle with the cornstarch, stirring constantly, until thickened. Pour into the baking dish. Let cool for 15 minutes.

Put the baking dish on the prepared baking sheet. Crumble the topping over the cherry mixture. Bake until the topping is brown and crunchy and the cherries are tender, 25 to 30 minutes. Serve the crisp hot, warm or at room temperature. Even better, t0p each serving with a scoop of vanilla ice cream.
