With lush, fertile soil and the South Pacific Ocean at their fingertips Fijians have plenty to work with from a culinary standpoint. Typical Fijian food consists of fresh tropical fruit, rice, sweet potatoes, taro, cassava, coconut and fish. There is also a heavy Indian influence throughout the islands so flavourful curries abound.

The majority of traditional Fijian dishes are cooked in a homemade underground oven, called a lovo, where meat and root vegetables steam for hours until tender. Most resorts in Fiji will devote one night per week to celebrations featuring Fijian choirs, dancing and a feast prepared entirely in the lovo.

Fiji is also developing a reputation for its haute cuisine with chefs from Australia and New Zealand flocking to its luxurious, five-star properties to put a new spin on the bounty of fresh local produce and seafood available in this unique area.
